Scott grocery shopped last Monday. Yes, my husband grocery shops. And secretly, I think he likes it. Who wouldn't? It's a chance to escape this land of looney tunes for an hour!! And as an amazing wife, I have my lists completely organized by the location in the store and in detail. It doesn't get any easier than that.
That being said, it was one of those weeks where I wanted to do a pantry and fridge clean out. You know? Out with the old...in with the new? I've had this pinned on my food board on Pinterest for a while now and it just so happened that I had about half a bag of red skin potatoes left. Perfect!
An adapted recipe from Pioneer Woman, these smashed red skin potatoes were delicious! We grilled some turkey sausage, had some fresh corn from the farmers market, and of course...watermelon! Any meal this time of year is not complete without watermelon. Or so my toddler thinks.
- 12 medium sized red potatoes
- 3 or so Tbsp of olive oil
- kosher salt
- pepper
- dried or fresh herbs (I used rosemary)
Fill a large pot with salted water. Add potatoes to the water. Be sure there is enough water to cover the potatoes. Bring to a boil and boil until fork-tender. It should take around 15-20 minutes. Preheat your oven to 450 while they boil. Drain water off potatoes and set aside.
Drizzle a baking sheet generously with olive oil. I would say you need at least 1½ Tbsp. Place cooked potatoes on the baking sheet, spacing the out evenly on the sheet, 3 rows of 4 potatoes. With a potato
masher, gently press down each potato until it slightly mashes, rotate
the potato masher 90 degrees and mash again. Think of making a
crisscross shape on them like you do with a fork on a peanut butter
cookie. Brush the tops of each crushed potato generously with the remaining olive oil. You can use more if needed. Sprinkle potatoes with kosher salt, fresh ground black pepper and herbs. Bake in a 450 degree oven for 20-25 minutes until golden brown.
I had a slight problem with the potato masher part. I don't know if I pushed down too hard, but some of the potato stuck in the masher and basically split the potato into a billion little pieces. I mushed it back together with my hands, but as you can see in this picture here, mine aren't quite as pretty as the original blog. Maybe I'll use a fork next time? Either way, they still came out great and I love that by simply changing the herb, you can change the entire flavor of them.
A simple meal for a challenging week.
Seniors were taking their finals at school and most of my classes were taking their last chapter test = lots of grading!!
Sean came down with some weird bug that left him with a low grade fever (still questionable since they've changed their definition of a fever?) and no appetite. I ended up bailing on my 3rd hour on Friday to come and pick him up from daycare since he was laying on the floor on pillows in his room trying to sleep at 10am. And doctor's visit confirmed he had a mystery virus. We skipped our dinner out and pool on Friday so Sean could stay home and rest. Poor guy...
Saturday, we headed out to Troy to celebrate with our friends who recently got engaged. See Sunday night's post for more details! It was great to see good friends and eat and drink at two of our old stomping grounds in Clawson.
Sunday, by the time we got home, we just ended up lounging around and playing with the boys. A pretty low key end to an eventful week.
Considering it's Tuesday already of the last full week of school, I can safely say this week isn't off to a smoother start. Sean still has no appetite and has no resorted to epic meltdowns at dinner time. Evan is clingy mcclingerton (that's an official word). I hope he's cutting his top teeth and doesn't have another ear infection. We'll find out Thursday at his 9 month well-visit - post to follow!
