Week 31: Homemade Spaghettios

I'm on edge.

My dreaded, held-off-as-long-as-possible umbilical hernia surgery is tomorrow morning.

I mean, I have had this since about 8 weeks pregnant with Evan.  And he'll be a year old in a few weeks.  How that's possible that he's just about a year old is beyond me.  So, I figure I can't put it off too much longer.  Only in the summer is it possible for me to take a good week or more to heal properly.

And so, the day has arrived.  I'm going to go out and get some ice cream in about an hour and then that's it for food until sometime mid-day tomorrow.  Assuming all goes well.

Oddly enough, I feel like this...thing...tomorrow signifies the end of the summer for me.  I can't swim for several weeks.  So much for places like the rec center, splash park, a friend's swim club.  Not like we can go to these places anyways with this unusually cool weather.  I'm not supposed to pick up my kids for at least a week.  Seriously?  Great timing with my overly snuggly baby.

But, I'll survive.  Considering this is surgery #4, it's safe to say this is not my first rodeo.  I just hope Scott can step up to the plate.  He's got some big shoes to fill over the next week.

In preparation for this event tomorrow, I spent a lot of last week getting as many things as possible done off our to-do list.  With some rainy weather on Wednesday, Scott took the opportunity to take Sean to see Turbo at the theater.  We figured it would be a good test to see how he'd do since the movie had been out for a few weeks already.  Planes comes out this weekend!  Can't wait to take Sean next week sometime!

Friday, the weather was finally nice.  And by nice, I mean gorgeous.  We packed up the new van and headed over to Greenfield Village.  It was the first time we'd gone all summer since we got our membership in the spring.  I loved it!  I think we all did!  Horses, turkeys, old fashioned cars, a carousel, and yummy treats.  What's not to love?








My parents finally got home from Europe that afternoon, so they stopped by for some good ol' American food like homemade patty melts, sweet potato fries, and blueberry pie.  I was in a cooking mood...

The rest of the weekend was just spent doing things with family and friends.  Scott took Sean to the Home Depot workshop Saturday morning, our friends stopped by Saturday night for a few drinks, and Scott's sister and her kids came by Sunday afternoon to go in the bounce house, swim in the inflatable pool, and on the play structure.  It was a great weekend!

Over the weekend we decided to try out the new deck and take the kiddie picnic table out of the garage for lunch outside.  So, I finally got the chance to try the homemade Spaghettio recipe floating around Pinterest.  We've never given Sean Spaghettio's from the can before and truthfully, I've never tried them either.  So, I don't have much of a comparison here, but it was good enough that Sean finished off three bowls full!  Too bad Evan isn't much of a pasta/spaghetti guy...

I can't please them all!


  • 8 oz ditalini pasta (or other small pasta)
  • 2 Tablespoons olive oil
  • 2 cloves garlic, pressed
  • Pinch of crushed red pepper flakes
  • 15 oz can tomato sauce
  • 1 cup water
  • 1 Tablespoon tomato paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon granulated sugar
  • 4 Tablespoons unsalted butter, cut into pieces
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
Cook the pasta in a large pot of salted boiling water, to al dente (about 10 minutes).

Meanwhile, heat the olive oil in a Dutch oven or large saute' pan over medium heat. Add the garlic and red pepper flakes and cook until just fragrant, about 30 seconds. Stir in the tomato sauce, water, tomato paste, salt, pepper, sugar and butter. Heat, while stirring, until the butter is melted. Slowly stir in the milk, then turn the heat to low. Simmer at low heat for 10 minutes. 

Stir the shredded cheese into the soup until melted. Drain the pasta and transfer to a serving bowl. Pour as much of the tomato sauce into the pasta as desired; stir to combine. (I don't like mine extremely soupy, so usually have about 1/3 cup of the sauce leftover.)

Perfect pasta shape for little fingers, easy to make, and resulted in some leftovers too!  I'd say we'll be making this again and doubling the batch to freeze some.

All this time we're spending outside enjoying our new deck, led Sean to find a caterpillar!  And what perfect timing with Evan's "Very Hungry Caterpillar" birthday party only two and a half weeks away.  Caterpillars are on my mind...


Online is telling us it's only going to turn into a moth, but it's still going to be fun to watch the process!
