The lengths we go for kids to eat veggies!

Yesterday, while Sean was napping, I took advantage of the 2 hours I had to shower and to make toddler food.  Exciting use of my time!  I made his favorite Mac and Cheese Cups that I posted about before, this time adding chopped up tomatoes and broccoli.  Instead of putting the veggies on top, I mixed them into the noodle, cheese, and turkey and I think it turned out much better.

I also decided to try a recipe from http://weelicious.com/2012/01/17/green-veggie-pancakes/ called Green Veggie Pancakes.  I love that Sean will eat broccoli.  So, I took some steamed broccoli from the night before and some cauliflower (frozen that I cooked quickly) and threw this recipe together.  I held my breath as he took the first bite during dinner and breathed a sigh of relief when he quickly gobbled up the rest of the bites!  This was a home run!  And I can't wait to substitute the cauliflower for a different vegetable.  Maybe something orange like squash!



1 Cup Zucchini, Broccoli, and/or Cauliflower
1/4 Cup Flour
1/2 Tsp Kosher Salt
1 Large Egg
1 Tsp Dried Basil
1/4 Tsp Garlic Powder
Canola or Vegetable Oil

1. Place the vegetables in a food processor and pulse to chop fine.
2. Add the chopped vegetables into a bowl along with the flour, salt, egg, basil and garlic powder. Mix to combine.
3. Heat oil in a skillet over medium heat and place 1 tbsp of the batter into the pan for each pancake.
4. Cook for 1-2 minutes on each side.

  1. You are lucky he is such an adventurous eater - or more than accurately you should pat yourself on the back for all the effort you go to, to ensure he is!
