So, I'm a day late and probably a dollar short, but considering the last couple days we've had in the Ferstle household, I think it's understandable. Sean was diagnosed with hand, foot, and mouth disease on Saturday when we took him to urgent care and it's been the craziest, most difficult few days of our lives! I'd like to say he's on the mend, as for the first time in days, he's content playing with his cars, a toy horse, and a Fisher Price piggy bank behind me in the computer room so I can steal a few minutes to check email and blog.
Here's what's on the menu for this week:
Monday - Homemade pizza and salad. Simple. Quick. Yummy.
Tuesday - Crockpot Italian Sausages with onions and peppers served on garlic cheese bread. I posted the link a few weeks ago to this recipe, but here it is again: Crockpot Italian Sausages.
Wednesday - Chicken tacos in the crockpot. Can you tell I'm looking for low-key meals with Sean being sick?? Here's the link:Crockpot Chicken Tacos.
Thursday - Lasagna and salad. Lots of prep work, but it will provide lots of leftovers too.

And that's my cue to sign off. Sean is demanding more Elmo on Youtube.com. I've watched more Elmo videos the last three days than I'd care to admit. But, it keeps him happy while he's feeling absolutely miserable. Thanks daycare! Give me another reason why I should just quit my job and stay at home...
You will love the crockpot chicken Caesar sandwiches. I ate waaaay too many of them when I made them myself.
