We're back from Chicago with a fridge/freezer stocked since Sean and I went grocery shopping this morning. So, here's what's on the menu this week (a few repeats from previous weeks because they're just so darn good!):
Monday - French Dip Sandwiches! Cape Cod 40% Reduced Fat Potato Chips to help dip in the Au Jus and some steamed broccoli with cheddar cheese on top.
Tuesday - Crockpot meatballs with spaghetti noodles and an Italian salad. I found the meatball recipe from the Cooking Light magazine a year ago and haven't been able to find the recipe online. So, if you're interested...just let me know and I'll type it up.
Wednesday - Grilled Chicken Cobb Salads with all the works: Bacon, Hard-boiled Egg, diced onion, Sunflower seeds, Croutons, etc. Yum!
Thursday - Baked Mac and Cheese with peas. Yes, peas. Basically, it's penne pasta, 1 carton of 2% cottage cheese, 1/2 cup cheddar cheese, 1/2 cup parmesan cheese, and some Panko breadcrumbs on top. Puree the cottage cheese, mix with the other cheeses, stir in the already cooked pasta, sprinkle with breadcrumbs and extra parmesan cheese and bake at 375 for 10 minutes. Amazing. I add peas to it too for some veggies.
Friday - Cheeseburgers, potato slices with onion, butter, salt and pepper on the grill, and corn on the cob.
